Beef & Bean Burritos - Make Ahead Style

Make Ahead Burritos are easy and yummy in the tummy!


YUMMY!

You could go totally vegetarian with only refried beans.

For the latest batch I did this: 

  • Browned 3-4 pounds lean, ground meat.
  • Opened two - 16 oz. cans of refried beans and plopped them in. (you could make your own)
  • Added some taco seasoning. (You could also just add your own garlic, cumin, cayenne...)
  • Mixed in about 10 oz. grated sharp cheese.
  • Warmed the large flour tortillas a bit in the microwave.
  • Filled the tortillas with bean, cheese & meat mixture.
  • Rolled them up in waxed paper. 
  • Next day when we wanted them I nuked them about one minute each and browned them in a small amount of oil, turning with tongs as they browned. 
  • (There are 4 sides to a burrito, if you wanted to know.)
They can be frozen.


Filling and rolling



I layer the waxed paper between the waiting tortillas so they are ready to fill and roll. 
Then I place them back in the bags they came out of.
