Olive Oil Choclate Chip Cookies

Olive Oil Chocolate Chip Cookies







2 1/4 cup flour (I sometimes use part wheat)

1 teaspoon salt

1 teaspoon baking soda

2 eggs

1/4 cup olive oil (canola also works)

3/4 cup granulated sugar

3/4 cup brown sugar

1 teaspoon vanilla extract

1 cup chocolate chips

1 cup chopped nuts (optional)

Preheat oven to 350 degrees.




 In a medium bowl, stir all wet ingredients and sugars together.


Add and mix in dry ingredients until combined. I increase the flour by almost 1/4 cup when I use our own chicken's eggs. They are much larger than store-bought large eggs.

 Eat a little cookie dough, if you dare. :)


Drop by spoonfuls onto ungreased baking sheets or make cookie bars by pressing into a medium cookie sheet with a rim.


Bake until barely set. These will continue to firm up after you take them off the sheets. They are very easy to overcook.
