Cha's Cajun Rice

Cajun or Dirty Rice


Updated 3/21/12: I made Cajun/dirty rice this last time with only hamburger meat. I added sun dried tomatoes and mushrooms. Nummy!


Everything is "to taste". It can be extremely spicy, or mild. I used to make a "concentrated batch" for adults, and have lots of extra rice to mix in with kid's portions. This is technically Cajun and not Tex-Mex.

I've made this different almost every time. So season and use ingredients that sound good to you. You can use shrimp if you like. Ingredients are in red.

Cook 2 cups your favorite rice. You end up with about 4 cups or so of cooked rice.
In a VERY LARGE skillet brown a pound or so hamburger meat. (I often use whatever I have leftover from cooking another day) You will need the extra room later to mix everything in.
Slice and brown one whole beef smoked sausage.

After meat has browned and been combined in the skillet, add and continue to cook:

Chop and throw in some Tabasco peppers or other hot peppers
. CAREFUL!
(If you don't have them just dash in a little red pepper flakes or cayenne.)
 

Slice up and throw in a complete bunch of green onions.


Turn off burner and stir in:

  • Butter or olive oil
  • Chicken broth or bouillon powder
  • Sage
  • Curry
  • Salt
  • Pepper
  • Cajun seasoning (optional, but isn't everything?)
  • Cumin
  • Sour Cream (If you need a cool down. I don;t always use it)
  • And last, but not least- Rice!
  • Beans are nice, but optional
  • 3/21/12: I added oregano and basil with the mushrooms and sun dried tomato version and no peppers.
