I made extra and froze it.
Tamale Pie
1 2/3 c. water, brought to boil
1 c. cornmeal
1 c. cold water
1/2 tsp. salt
1 lb. lean ground beef
1large onion, chopped
1 bell pepper, chopped
1 garlic clove, minced
1 Tab. chili powder
dash red pepper, optional
large can chopped tomatoes
(can throw in black or pinto beans)
16 oz. frozen corn
1 c. shredded cheddar cheese
In a large skillet cook meat about halfway. Add onion, pepper, and garlic, and cook until meat is brown. Drain fat. Stir in corn, chili powder, and undrained tomatoes. Cook a little while longer.
While the meat is cooking bring the 1 2/3 c. water to a boil. Stir the cornmeal and salt into the cup of cold water and then slowly stir this into the boiling water. Stir constantly. Cook until mixture is very thick. Turn off the burner.
Spoon the meat and veggie mixture into casserole dish and top with blobs of cornmeal mixture. (You can make enough cornmeal mix to put on bottom too if you like.)
Bake at 350 for 25 minutes. Sprinkle cheese on top and bake about 5 minutes more.
Serve with salad and bread. I ate chopped avocado on my tamale pie. Yum!

I tried the recipe and it turned out and we all liked it. I had never attempted anything like that before. Even Braden ate it. Thanks for the recipe
